FAQs About This Recipe

What kind of spaghetti should I use?

This recipe works well with any type of spaghetti (or pasta for that matter). We used regular spaghetti for this recipe but thin or thick spaghetti would also work. Keep in mind that you may need to adjust your cooking time slightly if you use a different type of spaghetti or pasta.

How should I store this recipe?

We use 3.4 cup glass meal prep containers for this recipe, and it fills each one up about 75%.

Tips From the Kitchen

Pack marinara sauce: If you’re like me and love a saucy spaghetti, then you may want to add a 2 or 4 oz plastic container with extra marinara sauce to your meal prep containers. This will ensure your meal has plenty of sauce when you reheat it later and will avoid having it dry out.

Add water as needed: Depending on your stovetop, 4 cups of water may be a bit much. It’s always best to start with less and add more as the water evaporates from the pan. I would say a good starting point is about 2.5 cups, then add another 1/2 cup of water as needed as the dish cooks.

Servings 4

  • 1 Large Jumbo Cooker
  • 4 3.4 cup meal prep containers

  • 1.5 lb chicken breast cut into 1-inch pieces
  • 8.5 oz basmati rice
  • 10.5 oz cream of chicken soup
  • 2 cups chicken broth
  • 1 broccoli head cut into florets
  • 8 oz shredded triple cheddar cheese
  • 1 tbsp parsley
  • 2 tsp minced garlic
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 small yellow onion
  • 1 tbsp olive oil

  • Turn oven to broil.
  • In a large pan with a lid, heat the olive oil, onion and chicken over medium-high heat until the chicken is no longer pink. Approximately 8 minutes. Stir as needed to ensure all sides of the chicken are cooked.
  • Stir in salt, pepper and garlic and allow to cook for one minute.
  • Stir in rice, broccoli, cream of chicken soup, and chicken broth. Cover and cook for 15 minutes and stir occasionally to ensure rice doesn't stick to the pan.
  • Stir in half the cheese (4 oz) and continue cooking for 2 minutes with lid on.
  • Turn off heat and allow to cool. Place into 3.4 cup glass meal prep containers and cover with remaining cheese. Place in oven for 1-2 minutes until the cheese melts and the casserole begins to brown.
