I would recommend sticking with flour tortillas for this recipe. While I haven’t used corn tortillas for this recipe, I believe there is a very high probability that corn tortillas will crack when you fold them. Flour tortillas are much easier to work with for these types of recipes.
How do I store leftovers?
You can store leftovers in an airtight container in the refrigerator or the freezer. When refrigerated, these scrambled egg burritos will stay good for up to three days. When placed in the freezer, they’ll stay good for up to 3 months. If you’re planning to use these burritos for meal prep, I recommend wrapping them in plastic wrap and/or foil before placing them in an airtight container. When ready to consume, they can be reheated in the microwave or in the oven.
What size tortillas should I use?
I use 10-inch burrito sized tortillas for these scrambled egg burritos. My philosophy is that it’s better to have a bigger tortilla and overlap it, if necessary, than a tortilla that is too small and allows ingredients to fall out. With that said, you are likely safe with an 8-inch or 10-inch burrito, unless you REALLY pack in the ingredients.
What kind of meat filling do you suggest adding to this recipe?
My go-to meat filling for this recipe is spicy Italian sausage. It’s an all-around great option for any breakfast, at least in my opinion. And it really adds a nice additional flavor to this recipe. Just brown the Italian sausage in a skillet before adding it to the burritos.

- 1 large jumbo cooker or skillet
Ingredients
- 4 eggs
- 4 oz diced tomatoes
- 2 oz shredded triple cheddar cheese
- 2 flour tortillas burrito size
- 2 tsp minced chives
- 1 tbsp olive oil
- salt to taste
- pepper to taste
Instructions
- In a small bowl, whisk together eggs, salt and pepper.
- Add egg mixture to a heated medium-large skillet or jumbo cooker.
- Scramble to eggs, shredded triple cheddar cheese and chives as the egg begins to form.
- Remove and set aside.
- Assemble burritos with eggs, diced tomatoes, remaining shredded triple cheese, and other toppings as desired.
- Once assembled, reduce skillet to low-medium heat and heat wrapped burritos until browned. Approximately 30 seconds on each side.
- Remove and serve.
