Bone-in meats take a little longer to cook than boneless meats, so be prepared to adjust the cook time as necessary.

The barbecue sauce will help lock in some moisture while the short cook time minimizes the risk of them becoming dry. However, if you’re one of those people who like to “leave it in a little longer to be sure,” then you’ll want to make sure you have a meat thermometer on hand before you begin cooking. If oven baked pork chops are left in for a just a couple minutes to long, they will start to dry out.

Add onions:
If you’re looking for a fancier pork chop, try cutting an onion in to rings and placing a few on each pork chop. This will improve the look of the meal while also adding additional flavor as the onion sautés in the oven.

Be generous with the sauce: Before cooking these pork chops, you’ll want to make sure they are completely covered in barbecue sauce. You should coat both sides with a good amount of sauce. You can’t use too much if you like juicy pork and barbecue sauce!

Adjust the bake time, if necessary: In this recipe, I used pork chops that were approximately 1/2 to 3/4 an inch thick. If you are cooking pork chops that are thinner or thicker than that, you’ll need to adjust your cook time up or down.

Ingredients
  

  • 1 large yellow onion sliced into 1/4-inch rings
  • 1 tbsp olive oil
  • 4 boneless pork chops
  • 1/2 cup barbecue sauce
  • 1 1/2 tsp kosher salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp pepper

Instructions
 

  • Preheat oven to 300ºF.
  • Line the bottom of a baking pan or cast-iron skillet evenly with the sliced onion rings.
  • In a small bowl, combine the salt, garlic powder, onion powder, chili powder, paprika and pepper.
  • Apply BBQ rub to both sides of the pork chops.
  • Bake for 10 minutes.
  • Remove from oven and brush both sides with BBQ sauce, as desired. Return to oven for 5 minutes.
  • Remove from the oven and allow to rest for 3-5 minutes. Top with onions and serve.
