Although this can be somewhat difficult because baby potatoes come in a wide variety of sizes, try to cut them as close to the same size as possible. Some potatoes may only need cut in half, while others could be cut into six or more pieces.
Use High Heat: If you’re looking for fries with a crispy exterior, it’s important to use high heat. For this recipe, you’ll want to roast the potatoes at 420°F.
Don’t Overcrowd the Baking Sheet: Be sure to spread the potatoes out on the baking sheet to reduce touching and avoid any overlapping. If the fries are lumped together on the baking sheet, they’ll steam more than they roast which will create a softer fry.
Don’t Forget to Flip: About halfway through, you’ll want to flip the fries so that they cook and brown evenly on both sides.
Make them Cheesy Fries: You can easily make these fries cheesy by removing them from the oven about 3 minutes before they’re finished cooking, adding your favorite blend of shredded cheese to the top and returning them to the oven until the cheese has melted. You’ll want to push the fries closer together on the baking sheet before adding the cheese.

Ingredients
- 1.5 lb baby potatoes sliced into quarters
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp paprika
- 1/4 tsp red pepper flakes
- 1 tsp salt
- 1 tsp pepper
- 1 tbsp olive oil
Instructions
- Preheat oven to 420°F.
- Slice the baby potatoes into quarters, lengthwise.
- In a small bowl, stir to combine the seasonings.
- In a medium-large bowl, add the potatoes and mix in the oil. With your hands, coat the potatoes in the oil.
- Add the seasonings to the potatoes and toss or stir to combine.
- Place the potatoes on a baking sheet in a single layer. Cook for 25 minutes until browned. For crispier fries, broil for 1-2 additional minutes.
