Ingredients
  

  • 12 oz lasagna noodles
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese divided
  • 1/4 cup grated parmesan cheese
  • 1 large egg
  • 1 1/4 tsp salt divided
  • 1/4 tsp pepper
  • 10 oz spinach
  • 24 oz pasta sauce

Instructions
 

  • Preheat oven to 400ºF.
  • Over high heat, bring a large pot of water to a boil. Once boiling, add 1 tsp salt and lasagna noodles to the water. Boil noodles as directed, then drain.
  • While the noodles are boiling, combine the spinach, ricotta cheese, 1 cup mozzarella, Parmesan cheese, egg, salt and pepper in a large bowl. Stir until evenly combined.
  • Once the lasagna noodles are cooled enough to handle, lay the noodles on a clean, flat surface. Evenly spread approximately ¼ cup of the spinach and cheese filling onto each noodle. This may need to be completed in batches, depending on the amount of available space.
  • Roll each noodle and place in a large casserole dish.
  • Pour pasta sauce over top of the lasagna rolls. Top the rolls with the remaining mozzarella cheese.
  • Cover the casserole dish with foil and bake for 30 minutes.
  • Allow the lasagna rolls to cool before serving.
