Equipment

  • 1 large jumbo cooker or skillet

Ingredients
  

  • 1 lb sirloin, skirt flank, or hanger steak
  • 3 bell peppers
  • 1 onion
  • 4 flour tortillas
  • 1 tsp minced garlic
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp olive oil divided

Instructions
 

  • In a small bowl, whisk together the minced garlic, cumin, salt and pepper (Reserve about 2 tbsp to season the vegetables).
  • Slice steak into strips and coat with the seasoning blend.
  • Toss the bell peppers and onion in the reserved seasoning blend.
  • In a large jumbo cooker or skillet over medium-high heat, add 1 tbsp cooking oil and allow to warm. Add the veggies and cook until softened. Approximately 5 minutes. Set aside.
  • Add 1 tbsp oil to the jumbo cooker or skillet, allow to warm. Cook the steak strips until cooked through (when the internal temperature reaches 145°F).
  • Return veggies to the pan and combine. Drizzle with lime juice.
  • Assemble fajita tacos, then serve.
