Can I make these burritos in advance?

Yes! You can make these blackened chicken burritos in advance. When refrigerated in an airtight container, they will stay good for up to 3 days. When frozen, these burritos will stay good for up to 3 months. Allow the burritos to thaw in the refrigerator before reheating if you opt to freeze them. The burritos can be reheated in the microwave or in a skillet. And, if you’re planning to meal prep a large batch of these burritos, it’s a great idea to make some burritos and some burrito bowls for a bit of variation without any additional work.

Can I use blackened seasoning?

You can certainly replace our blackened seasoning blend consisting of paprika, cayenne powder, onion powder, garlic powder, black pepper and salt with a store bought blackened seasoning. If you opt to go this route, I recommend using Zatarain’s Blackened Seasoning. You’ll need about 2 1/2 to 3 tbsp of seasoning for this recipe.

What’s a good side for these burritos?

A few of my favorite sides for this recipe are Mexican street corn, southwest side salad, grilled pineapple, queso mac and cheese and Mexican street fries.

How many burritos can I cook at a time?

I recommend only working on 1 or 2 burritos at a time. Any more than that will be hectic. Heat the tortilla, fill and wrap the burritos, then heat both sides on the skillet. This recipe should make 4 or 5 burritos so preparing them individually doesn’t add much time.

Tips to Make Great Burritos

Heat the burritos once filled: This step really improves the taste and texture of the burritos. Make sure you don’t skip it! After you fill and wrap the burritos, put them on a skillet for about 1 minute on each side to toast the tortillas. Start with the seam side down to seal the burrito a bit before turning the burrito over to heat the opposite side.

Marinade the chicken if you have time: If you can plan ahead, cube the chicken and season it well. Place it in an airtight bag in the refrigerator for at least 30 minutes and up to 24 hours before you’re ready to cook it. Marinading the chicken will allow it to absorb the seasoning and produce even more flavor.

Sauce up your burritos: Add a creamy flavor to your burritos by spreading sauce on your tortilla before adding the ingredients and wrapping it. A few of my favorite burrito sauces to use are Taco Bell’s Creamy Chipotle Sauce, Mild Sauce, and Creamy Spicy Ranchero Sauce.

Ingredients
  

  • 2 lb chicken breast
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 2 tbsp paprika
  • 1 tbsp cayenne powder
  • 1 tbsp onion powder
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp salt
  • 4 tbsp unsalted butter divided
  • 1 cup onions diced
  • 1 cup bell pepper diced
  • 8.8 oz brown rice
  • 8 oz shredded colby jack cheese
  • 10 oz diced tomatoes
  • 6 oz butter lettuce
  • 4 flour tortillas burrito size

Instructions
 

  • In a small bowl, combine paprika, cayenne pepper, cumin, black pepper and salt.
  • Drizzle olive oil over chicken, mix to coat. Sprinkle seasoning on both sides of chicken.
  • Heat 1 tbsp olive oil in a large jumbo cooker, over high heat. Cook for 3-4 minutes ensuring all sides are cooking.
  • In the same jumbo cooker, add onion and bell peppers. Sauté for 3 minutes.
  • Using a meat thermometer, ensure chicken has reached 165°F.
  • Assemble burritos with rice, chicken and veggie mixture, diced tomatoes and cheese.
  • Over low heat, heat burritos on both sides until lightly browned.
