- 2 lb chicken breast
- 2 tbsp olive oil
- 1 tbsp lime juice
- 2 tbsp paprika
- 1 tbsp cayenne powder
- 1 tbsp onion powder
- 1 tsp garlic powder
- 1 tsp black pepper
- 1 tsp salt
- 4 tbsp unsalted butter divided
- 1 cup onions diced
- 1 cup bell pepper diced
- 8.8 oz brown rice
- 8 oz shredded colby jack cheese
- 10 oz diced tomatoes
- 6 oz butter lettuce
- 4 flour tortillas burrito size
In a small bowl, combine paprika, cayenne pepper, cumin, black pepper and salt.
Drizzle olive oil over chicken, mix to coat. Sprinkle seasoning on both sides of chicken.
Heat 1 tbsp olive oil in a large jumbo cooker, over high heat. Cook for 3-4 minutes ensuring all sides are cooking.
In the same jumbo cooker, add onion and bell peppers. Sauté for 3 minutes.
Using a meat thermometer, ensure chicken has reached 165°F.
Assemble burritos with rice, chicken and veggie mixture, diced tomatoes and cheese.
Over low heat, heat burritos on both sides until lightly browned.
