What kind of potatoes should I use?

Potatoes are one of the most flexible foods on the planet – because they’re used in so many ways. But they’re also great because they are so interchangeable. For this recipe, you can use baby potatoes or regular potatoes. Either one can be cut to the similar sized pieces and that’s all that really matters. I usually use Little Potato Company’s (found at Walmart) mixed bags of red and yellow or red, yellow and blue potatoes.

What type of parmesan do you use?

For this recipe, I opt for grated parmesan cheese from a bottle. I’m sure freshly grated parmesan cheese would elevate this recipe a bit – but I have admittedly never tried it. I find the bottled grated cheese is perfect and keeps this recipe very quick and easy.

How should I store leftovers?

Leftovers can be stored in the refrigerator for up to 4 days when kept in an airtight container. They can quickly be reheated using a microwave. I drizzle a bit of olive oil over the potatoes when reheating to help ensure they don’t dry out.

What else can I add to these potatoes?

The only additions I’ve ever made to this recipe are sliced onions and green beans. I thought this combination was amazing. If you opt to add more ingredients, remember to add more seasoning as well. Tips to Make Perfect Potatoes

Adjust based on your butter: You can use salted or unsalted butter for this recipe. If you use salted butter, you may want to add a little less than the 1/2 tsp of salt the recipe calls for. For this reason, I use unsalted butter.

More liquid means less crispiness: This recipe is meant to create crispy potatoes. There are only a few “wet” ingredients, in small amounts: butter and olive oil. If you want softer potatoes add wet ingredients like broth or wet veggies. You could also really soften and sauce them up by adding a bit of garlic parmesan sauce (I recommend Buffalo Wild Wings!).

Don’t overcook the potatoes: Because this recipe leaves little margin for error due to the low amount of wet ingredients, you’ll want to keep an eye on the doneness. I start checking the potatoes around halfway through the cook time and turn off the heat when they reach the level of doneness I like. If you overcook the potatoes, they’ll go from crispy to dry very quickly. Unfortunately, this isn’t a “set it and forget it” type of recipe.

Adjust accordingly to the size of your potatoes: The cook time for these garlic parmesan potatoes is dependent on two things; the level of heat in your slow cooker and the size of your potatoes. The smaller the potatoes are cut, the quicker they’ll cook. So, make sure you adjust your cook time accordingly.

  • 3 lb baby potatoes
  • 1 tsp Italian seasoning
  • 1 tsp dried dill
  • 1/3 cup grated parmesan cheese
  • 4 tbsp minced garlic

Instructions
 

  • Slice potatoes into quarters or halves so that the cut potatoes are roughly the same size, then place in the slow cooker.
  • Sprinkle potatoes with seasonings and parmesan cheese. Stir to combine.
  • In a small bowl, combine the butter and garlic and pour over potatoes.
  • Cook on high for 3-4 hours or low for 5-6 hours.
