For this recipe, I recommend sticking with sirloin, skirt flank or hanger steak. I generally opt to use sirloin steak – but I’ve tried all three of these and would recommend any of them.  Each of these options offer a great combination of flavor and tenderness for fajitas.

What should I serve with these steak fajitas tacos?

My go-to side for this recipe is loaded nachos: tortilla chips, cheese, ground beef, jalapenos and diced tomatoes. Other great side options include refried beans, Mexican rice, Mexican or grilled corn, or a side salad.

Can I use any kind of taco shell?

Yes! This recipe uses flour tortillas, but you could use corn tortillas if you prefer, without any making any modifications to this recipe. You could also use hard taco shells instead of soft tacos if you prefer.

What else can I add to these fajitas?

These fajitas can be tailored to your taste with ease. A few common additions to this fajita recipe are salsa, sour cream, guacamole, cheese, lettuce, cilantro and pico de gallo. A few less common ingredients that I’ve included are mushrooms, zucchini and roma tomatoes.

How do I know when the steak is fully cooked?

The easiest way to know when the steak is cooked is to use a meat thermometer. Since steak “doneness” preferences vary widely, the internal temperature is the easiest way to make sure you’ve hit your target temperature. Follow these internal temperature guidelines and cook the steak as you prefer it:

Rare: 120 to 125°F
Medium rare: 130 to 135°F
Medium: 140 to 145°F
Medium well: 150 to 155°F
Well done: 160 to 165°F

How should I store leftovers?

If you have leftovers, you can store them in an airtight container in the refrigerator. They will stay good for up to 4 days. Allow the fajitas to rest and come to room temperature before you seal them in an airtight container. To reheat the fajitas, place them in the microwave for 1 to 2 minutes until they are warmed through.

Tips to Make Amazing Steak Fajita Tacos

Marinade if you can: If you aren’t in a hurry, marinade the steak for at least one hour (and up to 24 hours in advance). My go-to marinade is a bottle of Lawry’s Steak & Chop. And I sliced the steak into strips and marinade in an airtight bag. Then you just have to drain the bag before adding the steak to the skillet.

Be ready to cook when you heat the skillet: This recipe cooks quickly, so it’s important to have all of the ingredients prepped and ready to go before you start cooking. If the ingredients aren’t prepared ahead of time, you will be at risk of overcooking the steak.

Prep in advance: If you’re cooking this meal during the week and want to save a bit of time, you can prep the steak and veggies ahead of time. These ingredients will stay good in the refrigerator for up to 48 hours.

Go Cajun: My favorite variation for this recipe is making it Cajun style. Instead of the seasoning blend used in this recipe, use a bit of Cajun seasoning (I recommend The Big Easy, which I’ve only found at Pepper Palace and online).

Use a cast iron skillet: I’ve made this recipe in a jumbo cooker, but it can also be made in a cast iron skillet without any modifications. If you prefer using a cast iron skillet, you can use it for this recipe.

  • 1 large jumbo cooker or skillet

Ingredients
  

  • 1 lb sirloin, skirt flank, or hanger steak
  • 3 bell peppers
  • 1 onion
  • 4 flour tortillas
  • 1 tsp minced garlic
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp olive oil divided

Instructions
 

  • In a small bowl, whisk together the minced garlic, cumin, salt and pepper (Reserve about 2 tbsp to season the vegetables).
  • Slice steak into strips and coat with the seasoning blend.
  • Toss the bell peppers and onion in the reserved seasoning blend.
  • In a large jumbo cooker or skillet over medium-high heat, add 1 tbsp cooking oil and allow to warm. Add the veggies and cook until softened. Approximately 5 minutes. Set aside.
  • Add 1 tbsp oil to the jumbo cooker or skillet, allow to warm. Cook the steak strips until cooked through (when the internal temperature reaches 145°F).
  • Return veggies to the pan and combine. Drizzle with lime juice.
  • Assemble fajita tacos, then serve.
