Epic Barbecue Pork Chops in Oven Recipe

- 1 large yellow onion sliced into 1/4-inch rings
- 1 tbsp olive oil
- 4 boneless pork chops
- 1/2 cup barbecue sauce
- 1 1/2 tsp kosher salt
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp chili powder
- 1/2 tsp paprika
- 1/2 tsp pepper
Preheat oven to 300ºF.
Line the bottom of a baking pan or cast-iron skillet evenly with the sliced onion rings.
In a small bowl, combine the salt, garlic powder, onion powder, chili powder, paprika and pepper.
Apply BBQ rub to both sides of the pork chops.
Bake for 10 minutes.
Remove from oven and brush both sides with BBQ sauce, as desired. Return to oven for 5 minutes.
Remove from the oven and allow to rest for 3-5 minutes. Top with onions and serve.
