- 8 oz rotini
- 10 oz cherry tomatoes halved
- 1 tsp garlic minced
- 1/2 yellow onion diced
- 1 zucchini sliced
- 8 oz baby bella mushrooms sliced
- 1/2 tsp crushed red pepper
- 1/2 tsp kosher salt
- 14 oz pasta sauce
In a large pot with a lid, add all ingredients except the spinach and stir to combine. Bring the pot to a boil then reduce to medium heat.
Cook the pasta for 15 minutes, stirring regularly to prevent it from sticking to the pan.
Turn the heat off. Fold the spinach into the pasta then cover for 10 minutes.
Divide the pasta into equal amounts and place into four 3.4 cup meal prep containers.
