Ingredients
  

  • 8 oz rotini
  • 10 oz cherry tomatoes halved
  • 1 tsp garlic minced
  • 1/2 yellow onion diced
  • 1 zucchini sliced
  • 8 oz baby bella mushrooms sliced
  • 1/2 tsp crushed red pepper
  • 1/2 tsp kosher salt
  • 14 oz pasta sauce

Instructions
 

  • In a large pot with a lid, add all ingredients except the spinach and stir to combine. Bring the pot to a boil then reduce to medium heat.
  • Cook the pasta for 15 minutes, stirring regularly to prevent it from sticking to the pan.
  • Turn the heat off. Fold the spinach into the pasta then cover for 10 minutes.
  • Divide the pasta into equal amounts and place into four 3.4 cup meal prep containers.
