Preheat oven to 400ºF.
Over high heat, bring a large pot of water to a boil. Once boiling, add 1 tsp salt and lasagna noodles to the water. Boil noodles as directed, then drain.
While the noodles are boiling, combine the spinach, ricotta cheese, 1 cup mozzarella, Parmesan cheese, egg, salt and pepper in a large bowl. Stir until evenly combined.
Once the lasagna noodles are cooled enough to handle, lay the noodles on a clean, flat surface. Evenly spread approximately ¼ cup of the spinach and cheese filling onto each noodle. This may need to be completed in batches, depending on the amount of available space.
Roll each noodle and place in a large casserole dish.
Pour pasta sauce over top of the lasagna rolls. Top the rolls with the remaining mozzarella cheese.
Cover the casserole dish with foil and bake for 30 minutes.
Allow the lasagna rolls to cool before serving.
