- 12 eggs
- 6-12 slices pepperjack cheese
- 8 oz shredded pepperjack cheese
- 6 bagels
- 3 tbsp olive oil
- pepper to taste
- salt to taste
Crack the eggs into a medium-sized bowl. Add the olive oil and whisk to combine until the whites and the yolks are completely homogenous.
Heat a jumbo cooker over medium heat. Unless using a non-stick pan, add 1 tsp olive oil or coat the pan with cooking spray.
Pour the scrambled egg mixture into the pan and stir with a spatula.
As the eggs begin to set, add the shredded cheese. Then mix/flip.
Toast bagels, if desired.
Form eggs into bagel-sized pieces, place slice of pepperjack cheese on top. Turn heat to low and allow cheese to melt.
Add eggs to bagels, then serve.
