Cheesy Chicken Broccoli Pasta Casserole Recipe

- 1.5 lb chicken breast cut into 1-inch pieces
- 8 oz rigatoni pasta
- 10.5 oz cream of chicken soup
- 2 cups chicken broth
- 1 broccoli head cut into florets
- 8 oz shredded triple cheddar cheese
- 1 tbsp parsley
- 2 tsp minced garlic
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
- 1 small yellow onion
- 1 tbsp olive oil
Turn oven to broil.
In a large pan with a lid, heat the olive oil, onion and chicken over medium-high heat until the chicken is no longer pink. Approximately 6-8 minutes. Stir as needed to ensure all sides of the chicken are cooked.
Stir in salt, pepper and garlic and allow to cook for one minute.
Stir in pasta, broccoli, cream of chicken soup, and chicken broth. Cover and cook for 12-15 minutes while stirring occasionally to ensure rice doesn't stick to the pan.
Stir in half the cheese (4 oz) and continue cooking for 1-2 minutes with lid on.
Turn off heat and allow to cool. Place in oven for 1-2 minutes until the cheese melts and the casserole begins to brown.
